Le mini tarte twist alla mandorla e cioccolato sono delle tartellette realizzabili con il nuovo stampo di Silikomart “Kit mini tarte twist” e sono bellissime da vedere e buonissime da mangiare.
Una base di frolla del maestro Montersino, ganache al cioccolato fondente e mousse leggera alla mandorla, un connubio favoloso e golosissimo.

Chiedo scusa per la latitanza degli ultimi tempi sul blog ma ultimamente sono presa da tante altre cose, il lavoro sempre più stressante, venerdì ho consegnato un buffet per 25 persone, sabato ho realizzato la torta per i  40 anni di mio fratello che nei prossimi giorni vi mostrerò,  e a dire la verità sono anche un po’ stanca ma tornerò più carica di prima o almeno spero.

Dedico queste tartellette alla mia migliore amica Rossella che oggi compie gli anni.

MINI TARTE TWIST ALLA MANDORLA E CIOCCOLATO
Per 6 tartellette
Frolla del Maestro Montersino

125 g di farina 00
75 g di burro a temperatura ambiente
50 g di zucchero semolato
1 tuorlo medio
1 pizzico di sale
la polpa di mezza bacca di vaniglia

Mescolate il burro morbido con lo zucchero e i tuorli, aggiungete sale e vaniglia.
Unite per ultima la farina e impastate con la punta delle dita.
Formate una palla e coprite pellicola trasparente e lasciati in frigo a riposare per almeno 4 ore.

Ganache al cioccolato fondente

100 g di cioccolato fondente al 50%
50 g di panna fresca
10 g di burro

Scaldate la panna su un pentolino, fate fondere il cioccolato e unitelo vigorosamente alla panna, unite il burro e mescolate fino ad ottenere una crema morbida e corposa.

Mousse alla mandorla
150 ml di panna fresca
150 g di crema spalmabile alla mandorla (la ricetta qui)
4 g di colla di pesce già ammollata in acqua fredda e ben strizzata

Per terminare

Velvet Spray White Silikomart

Scaldate la panna in un pentolino, stemperate la crema di mandorla al suo interno e unite infine la colla di pesce.
Versate il contenuto nell’apposito stampo twist di Silikomart e mettete a congelare per circa 3 ore.

Una volta trascorso il riposo della frolla, stendete l’impasto con l’aiuto di un mattarello e formate 6 tartellette che che inserirete all’interno dei ring forati di Silikomart.
Cuocete le basi di frolla a 180° fino a doratura (15-20 minuti).
Farcite con uno strato di crema ganache e poi estraete le piccole mousse di mandorla dal congelatore dopo il tempo dovuto.
Decorate infine con lo Velvet Spray bianco di Silikomart.
