CHEESECAKE ALLO YOGURT E CIOCCOLATO BIANCO CON CILIEGIE ALL’ACETO BALSAMICO
Per uno stampo a cerniera di 20 cm di diametro
Per la base
85 g di biscotti secchi tritati
85 g di biscotti secchi tritati
85 g di biscotti secchi al cacao tritati
85 g di burro fuso
10 g di miele millefiori
Per la crema
10 g di miele millefiori
Per la crema
200 ml di panna da montare
200 g di yogurt cremoso
350 g di formaggio fresco spalmabile
80 g di zucchero a velo
180 g di cioccolato bianco fuso + 20 ml di latte intero

100 g di purea di ciliegie al balsamico
Per le ciliegie al balsamico
350 g di ciliegie fresche
40 g di zucchero semolato
350 g di ciliegie fresche

2 cucchiai da tavola di aceto balsamico alle ciliegie
Per decorare
ciliegie

foglioline di menta
eventuale topino al cacao
In una padella mettete le ciliegie denocciolate e lo zucchero e fatele appassire leggermente, unite l’aceto balsamico e fate restringere. Tritate 100 g delle ciliegie in un un mixer e il resto lasciatele per servire.
Setacciate la purea e tenetela da parte per la crema.
Mescolate il burro, i biscotti tritati e il miele millefiori formando la base per la vostra torta.
Con la forchetta mettete il composto nello stampo e adagiatelo in maniera omogenea.
Mettete lo stampo in frigo per circa 15 – 20 minuti.
Nel frattempo preparate la crema montando la panna a neve fermissima, aggiungete il formaggio cremoso, lo yogurt, lo zucchero a velo e unite la purea di ciliegie setacciata, mescolando bene.
Amalgamate per ultimo il cioccolato bianco fuso mescolato insieme al latte e mescolate bene.
Trascorso il tempo di riposo, mettete la crema sopra la base di biscotto e livellatela bene.
Lasciate riposare in frigo almeno 4- 5 d’ore.
Al momento di servire decorate con le ciliegie all’aceto balsamico e una salsa al cacao a piacere.
